A traditional fall recipe I enjoy every single year after we moved to the USA is Pumpkin Spice Latte. Since I’m not a huge fan of highly processed foods and sugary drinks, I try to stay away from coffeehouse chain purchased lattes and decided to create my own recipe. You can add sugar or sugar substitutes if you don’t like a complete raw version of this drink, I prefer it without.

Serves 2

Ingredients

  • 2 cups of 2% milk (soy or almond milk are great dairy free substitute)
  • 2 tbsp organic pumpkin puree
  • 1 tbsp organic vanilla extract
  • ½ tbsp Pumpkin Pie Spice
  • pinch of red pepper
  •  ½ cup strong and hot coffee (or 1 to 2 shots of espresso – about  ¼ cup)
  • pinch of cinnamon

 

Method:

  1. In a saucepan, whisk together milk and pumpkin puree. Cook on medium heat on the stovetop until hot but do not boil.
  2. Remove the saucepan from heat, stir in vanilla extract, spices and coffee.
  3. Divide the mixture between two mugs. Sprinkle with cinnamon. Enjoy!
