Who doesn’t love to start the morning with fresh, homemade pancakes? I’m personally not a fan of store purchased mixtures or ready to eat pancakes, instead I prefer a healthier option. I found a recipe for healthy protein pancakes online but I decided to change a lot of ingredients and this recipe is my personal favorite. The texture is soft and rich – just like regular pancakes, but filled with a lot of nutritional benefits to start your day healthy instead of sugary.

Ingredients:

  • 1/4 cup Oat bran
  • 1/2 cup Cottage cheese
  • 2 Eggs
  • 1 tbsp. Protein Powder (optional)
  • Pinch of salt
  • Pinch of cinnamon
  • Pinch of fresh orange chest
  • 1/2 cup fresh seasonal fruits

Method:

  1. Place all of the ingredients in the same order as posted above into a food processor and combine well
  2. Heat up a pan with a little bit of oil or butter until hot and reduce heat immediately after back to low
  3. Put 1/4 of the mixture into the pan for 2 min.
  4. Carefully flip to the other side and continue to cook for another 1-2 min. or until light golden
  5. Top the pancakes with fresh, seasonal fruits and a tiny bit of maple syrup and enjoy
